chai

I love tea. So much so that I stopped drinking coffee entirely about two months ago. Partly because the caffeine was bothering me and partly because I just started preferring tea more (and, no, I'm not pregnant, and no, I'm not crazy). Like a good Brit's wife, I prefer milk in my tea, and I especially like chai, but not too sweet.

Thanks to another Amy, I have discovered the most ingenious and delicious way to make chai tea at home - with chai tea concentrate, which is simply a concoction of sweetened condensed milk and indian spices that most of us have in our cabinet. Here's how easy it is: You brew a cup of tea, add a spoonful or two of the concentrate (which you keep in the fridge), and stir. I could drink it all day. In fact, I do.

The recipe for the concentrate can be found here. I left out the sugar. It's really sweet enough without it.

p.s. Try these cookies with your chai. They are incredible.
